Boozy Rocky Road Fudge

Since I posted about my Great Scottish Bake Off a little while back, a handful of you have got in touch to ask for the recipes. So, my dear chocolate loving ladies and gents, here you have it. It is with great pleasure that I present my most favourite indulgence in the whole entire world. Please give a warm round of applause for the one, the only, Boozy Rocky Road Fudge.

Anyway. To make a good sized batch and/or make a small group of humans fall in love with you instantly, you'll need:

300g good quality dark chocolate, roughly chopped
75g milk chocolate
100g sweetened condensed milk
20g unsalted butter
50g chopped unsalted pistachio kernels
50g Baileys (other Irish Cream liquors do work but the flavour is nowhere near as delicious)
100g crushed shortbread biscuits
150g mini marshmallows


No need to pre-heat the oven, all this little baby needs is love, affection and a fridge freezer. First up, line a small square pan and melt your chocolate, Baileys, butter and milk in a heat-proof bowl over a pan of boiling water.

When it's melted into a dark, shiny gloop, leave it to cool for a few minutes before throwing in your pistachios, marshmallows and shortbread biscuits. Give it a stir and make sure everything is nice and evenly coated. Spread it out into your pan.


At this point I would suggest you immediately take a swig from the Baileys bottle. Not because you need a pick me up after such tireless exertion, but just because you can. Remember, the countdown to Christmas is on. You can drink whatever you like even before 5pm and nobody can say anything about it. Fact. 


Pop your rocky road into the fridge and leave it there for 2-3 hours, or overnight if possible. (How anyone could possibly resist temptation for that long is beyond me.)


When it's set, cut into small chunks, pour yourself a glass of milk and on the count of three, devour.


One of the easiest, most decadent little nibbles known to man kind. And now you can make it all day, everyday. Forever.
